honey and soy marinated chicken skewers, split the honey and soy marinade in half and use one portion to marinate the chicken you have diced into large squares, 3 hours to marinate or overnight is much better if possible and then skewer along with red pepper cut to the same size. place the skewers under a hot grill using the other portion of marinade to baste and turn until cooked and slightly charred on the corners.... sublime!
Serve with a good garlic homos and toasted pitta cut into strips for dipping.
I know Im a bit late but maybe its food for thought for next time.

3 chicken stock cubes mushed with salt and pepper into a couple dessert spoons of nice olive oil. Rub the gritty mixture onto the chicken breasts and then fry. You get a really nice crispy outside to the chicken and it's really flavoursome, but best of all ridiculously simple.
Sorry late to the party.
Put chicken in a foil parcel with a squashed garlic, chopped chilli, EV olive oil, mixed herbs, season with salt and pepper.
Shove in the oven for 25 minutes ish.
Serve with rice and/or salad.
Maybe do some steamed veg as well.
