What's cooking tomorrow?

Got a deal on some veal shin (6CHF for six, and nothing is cheap here 12CHF for a small chicken!) so I'm going to do osso buco tonight but probably for tomorrow night as want to cook it for a nice long 6hours.

Made some chicken stock last night so will use some of that for it.

Tomorrow I'm going to try and raise my game. I'm cooking everything I can from scratch having been inspired by this week's Masterchef.


Spinach and Ricotta Ravioli
Fillet of beef, onion and garlic puree and a red wine jus
Selection of cheese

Château Pontet-Canet, Pauillac 2003

Although the dishes sound fairly simple I am going to focus on quality and presentation. I hope it works out :)
 
Tomorrow I'm off to an engagement party, I believe there could be a hog roast going too, served in freshly baked baps with brie and chutney!
Not as classy but certainly Nomtastic!
 
The kitchen in the Spie household has been busy this afternoon! Really enjoyed the whole experience despite making some mistakes, but nothing I can't put right next time.

Pics aren't great as it was dark when they were taken.

Made the pasta from scratch, but didn't quite roll it thin enough. Stuffed with spinach and ricotta, cooked in chicken stock it did taste superb though :)

The main course took some time. Couldn't get fillet steak today so used a superb piece of sirloin. Served an a bed of onion and garlic puree although I really need a new food processor as it wasn't as smooth as it should have been. If anyone fancies buying me one for Christmas I want one of these. The baby potato and shallot were cooked in stock then browned in a little olive oil for a few minutes. Asparagus tips were easy, once I'd leveled them to stand up :D Biggest disappointment was my red wine jus. It was too oily. Although again it tasted good, presentation wasn't up to scratch. I need to work on my technique here.

Overall though I created 2 lovely plates of food, and Mrs Spie was happy, so well worth the effort :)
 
Looks great, home made ravioli is great. It's tough getting it thin enough, I also have to make extras, as I always get some which split. Stupid air bubbles.

Have you got the recipe for the onion & garlic purée?

Also love your plates, what are they?
 
Going to be doing

chicken Washington chowder
Slow roast mutton on a bed of sliced potatoes
Some sort of simple pie.

In lazy cooking feel. And need to use meat up, hence chicken added to Washington chowder.
 
Pan roasted duck breast, spiced cabbage with a blackberry sauce for dinner tonight. Will post pics when I'm done :)

Couple of errors - the sauce didn't reduce enough and the duck was a little over done. Basically I messed up my timings a little, was still tasty though.

Looks good Spie.

Got a shedload of veg to use up tonight and I'm on an eating mission.

Bit of Med-fusion happening. Three free-range chicken thighs roasted in with some potatoes, lemon juice and garlic. Veg roasting next to it is aubergine, red and orange pepper, French garlic and lemon. Making a gravy out of chicken stock, lemon and thyme. So hungry though, don't think I can wait another 45 minutes :D
