We use all DHCP with static leases applied for servers and specific devices when firewall rules are required. This makes changing DNS WINS and other network setting much simpler. We're justing finishing migrating 15,000 users and machines to AD so when we want to change DNS servers we just change it in DHCP and it changes across the board.
I can't see a reason for not running DHCP if you have a device to handle it.
