Where is the boot info stored?

Quick question (hopefully):

For various reasons I've ended up with 3 HDs in my system, a total of 7 partitions and 3 windows 7 installs...

I've now done a fresh reinstall of Windows 7 on my SSD and want to format the old partitions that have old installs of Windows 7 on. Will I be ok to do this or is there a chance that boot info could be stored on those partitions?

power off, unplug the other drives and then see if windows still boots from the SSD.

If it doesn't boot after pulling the other drives, reconnect them, get back into windows and use EasyBCD to install a bootblock onto the SSD and setup the boot menu, then reboot and head into the BIOS and make sure the SSD is first in the boot order.
You should be good to go then.
