I think the first game I'll play is CS:GO as I already own it, and it's small so quick to download

Just play online and get owned. Eventually you'll get owned less until the point where you're competitive
You can have the best aim in the world but if your game sense is crap then what use is that? Just practice online man, you'd probably find yourself getting owned and getting mad, but that's the only way to improve imo.
Wrong! The ingame slider is the most important point of reference here as all games by default will be set to a different mouse speed. Its about moving that slider ingame so you always end up in the same reference point in all games so your mouse sensitivity is always the same no matter what you play.

Even the best bots don't compare to real players. I never got into GO, was massively into CSS back in the day. Does GO not do a reasonable job of matchmaking?
Spiterbot in Quake 3. It times items, gathers all health bubbles/armour, weapons, peeks around corners, will concede for items again if it feels threatened, rocket jumps then it'll drill you with 87 - 95% LG. It's got crazy good rail as well. It wont contend until it's stocked up with items.
Play Overwatch, there are characters which basically are not aim dependent and characters which require very good aim, so you'll be able to play a mix of both and enjoy the game. Also there's a lot of characters which don't die in half a second which will allow you to practice tracking, unlike in CS:GO where fire fights are over very quickly.
