Which is better?

Out of these two, which will provide the best performance/responsiveness within Windows.

1x WD 300GB Velociraptor

OR

2x WD 6400AAKS RAID-0

Im thinking the raptor due to access times?

Personally id go for the raptor as its a shi* hot drive and 1 drive uses less power than 2, meaning it will draw less power from your PSU, just my 2 cents

I have two WD 6400aaks in a raid 0 set up.

1 160GB volume for the windows and apps
1 1032GB volume for storage

ive just run HD tune and this is the result, not bad seeing as its been up and running for 5 months. I would have expected it to slow down more than it has with the usage i give it..
