Which M.2 SSD should I use for OS/Apps and which for storage/work space

Hello!
I’m in the process of building/drip-feeding my next PC powerhouse build for 70% work (Adobe/3D modelling/ Video content) and 30% play (Tarkov/Warzone/racing sims).

Due to budget, I bought a Western Digital Black SN850 500GB M.2-2280 NVME SSD and a Western Digital SN750 500GB M.2-2280 NVME SSD to be installed into a Asus X570 Gaming-E with a 5900x.

I'm unsure on which to install Win10 Pro, apps and games on and use the 2nd SSD for saving files to and working on (After Effects/Premiere Pro/SketchUp/Vray etc.).

I’m thinking:
SN850 - Win10/apps/games
SN750 - Temp storage/workspace

It’s best to work on video files that aren’t on the same storage as the apps.
Your thoughts would be really appreciated.

I agree with your selection above (install Windows on the fastest drive).
I would also consider an HDD for long term storage, back-up storage.
Maybe something like this:

SN850 - Win10/apps/games​

SN750 - Temp storage/workspace​

HDD - Long term storage/back-up (optional)​

My only concern would be if 500GB is big enough to store games as some modern games require a significant amount of storage space (for example: Project CARS alone requires 50 GB of drive space).

I would agree, your fastest drive should be your OS drive. I have just bought a 2TB WD SN850X as it seems to be the best drive for games, even beating the 990 Pro for gaming.

I would go with what Paul said, I have the same setup.
