Which of these Hitachi drives?

Hi, I need to replace my drives on my No. 2 system and so I am moving the drives from my No. 1 system as replacements.
This gives me the chance to buy 2 new drives. I try to be future proof if possible and so fancy a pair of the Hitachi SATA drives as all of my computers based on Abit NF7-S ver 2.0 motherboards run in raid 0.
My question is what is the real world difference between the following drives apart from capacity?

Hitachi Deskstar T7K500 NCQ 250GB SATA-II 8MB Cache

Hitachi Deskstar T7K500 NCQ 320GB SATA-II 8MB Cache

Hitachi Deskstar T7K500 NCQ 400GB SATA-II 16MB Cache

I am looking for fast and quiet drives, I don't like to hear them chattering away.

Additionally, I can find no mention in the manual for my motherboard (listed above) about maximum capacities of hard drives, anyone know if the NF7-S can run drives of any size or is there a limit?

Personally I would go for the 400GB one due to more cache and iirc the density of the platters is slightly higher.

You can adjust the noise etc using the hitachi tools but it does slow them down a bit.
