Need to decide on which one is best for me..

BFG GeForce GTX 280 OCX 1024MB
http://www.overclockers.co.uk/showproduct.php?prodid=GX-075-BG

or

Sapphire ATI Radeon HD 4870 X2 2048MB

Currently have 2x XFX 7900gtx extreme editions in sli, thinking would prefer a single card solution.

From what i can make out the full potential of the ATI cards has yet to be discovered , but they suffering from stutter? where as the GTX is going to be replaced with a revised verion (+) soon? but the price is good.

What's everyone else's thoughts on this?

If your system can take a second 280 at a later stage then at 200+VAT rather than 300+VAT it could be a better option. By the time the driver are fully realised for the 4870X2 the 280 could be down to £150+VAT or less. I am pretty sure that an SLI pairing of these would be even more of a beast :)

yeah, can stretch to x2 280's, but would rather not, as i really dont see much performance increase over a single solution, res is 1900x1200

Gotta be the 280 then, as the X2 is a dual gpu job, so in several cases it will, just as with 2x280's in SLI, be performing as a single 4870.
