windows load times would be quicker with the1 drive as u dont have to load the raid drivers, but otherwise the 2 drives would be quicker as long as they are in raid-0.

You'll lose TRIM though running in RAID so bare that in mind.

No, they brought an update out that allows TRIM to work while the controller is in RAID mode if the Ssd in in a raid array it won't work. They are still researching if it is possible to have TRIM on a raided drive but don't get your hopes up.
