Why does firefox use so much memory?

The problem's at your end then. You've probably got ****loads of bloated addons and extensions installed(?).

Firefox only takes 32MB for me with 1 tab showing google.co.uk and the following extensions:

Yeah probably! No wait, I run adblock plus, oldbar, delicious and no script, nothing else.

ABP can fairly rip into your memory and it definitely has a significant effect on startup time.

I notice that Firefox, with the same number of tabs open, progressively eats up memory as you surf more pages within the same tabs. If you save the session, close and reopen Firefox, the memory usage will drop back down to around 150MB for me.
