I always thought it to be the refraction of light in the ionosphere... but I'm convinced we now have rainbow sheep lining the sky

Its the refraction of light as it hits the atmosphere. If our atmosphere was of a different density, we would have a different colour sky. For example, on Mars, the sunset is apparently blue due to Mars having a much thinner atmosphere.
