Will OS drive(s) sleep while downloading to another drive?

I'll be running two drives in RAID 0. The PC will download to a data drive on an eSATA port.

When the system is idle except for the download will the OS RAID drives sleep?

I doubt it as it's it's being accessed by background apps, processes etc.

it may, if eco-friendly slow down but, no it wouldn't stop as the program and OS still need to function when you download. It's better to download to your OS drive then move it, as you can let your other drives rest (depending on power settings).

I wanted to use a smaller less important drive to take the torrent battering rather than the RAID'd OS drives.

No drives slow their speed.
