Wired or wireless?

Wired keyboard, wireless mouse. No point having a wireless keyboard when it doesn't move, unless you're that fanatical about a clean desktop.
IMO the keyboard is way more of a rabbit-hole than the mouse. I went mechanical a decade ago and there's not going back, but you're in for £80 so could be out of your budget. Either way I'd go 80% TKL or smaller. It just gives your mouse extra room on the desk. Maybe someone will recommend a good membrane keyboard.
As for the mouse, you can't go wrong with Logitech. I recommend the G502X to everyone but again, it'll sting you for £70. The G703 is an absolute legend at around £55 or the G305 for a simple, symmetrical design at £35.
Get yourself to a Currys or something so you can actually hold the mice and see what feels good. Mice are all pretty much functionally the same these days; you just need to find one that fits your hand and grip style.

Potentially, I was really into the whole Mouse “scene” not too long ago before settling myself with a Zowie EC2-DW.
The trouble with Mice is that one size dosent fit all, it depends on hand size, preferred grip style and so on!
Do you have Small, Medium or Large hands?
What Grip do you use? E.g Palm, Claw, Relaxed Claw, Finger Tip
I don’t want it to seem too technical, but these things are really important
But essentially need to recommend something designed for your grip style, and not to small or two big then the rest should be history

Also, don't be put off by mice that run on AA batteries. Yes, rechargeable is better, but the G305 gets hundreds of hours out of a single AA battery.
My old G603 (identical to the G703) used two AA batteries in parallel, so you could switch to one battery if you wanted a lighter mouse with shorter battery life. It still lasted ages, and at 116g in total with an Eneloop rechargeable it was only 10g heavier than my current G502X (which is praised for being lightweight for its size & features).

Like everyone has said, wired keyboard and I would say wireless mouse.
Like Gilbert said, with a mouse it's all down to how you hold it and it gets even more complex if your left handed freak like me
For the last few years I have been struggling trying to find a replacement for my trusty Logitech G300, I'm on about my third G300 and I can't find anymore. I bought a Logitech G903 3 years ago and have been trying to get use to it, but I hate it and I get it out every few months and give it a try for a few hours and just hate it. So after doing lots more research I came across Endgame Gear OP1w 4K, a mouse that can be modified and it's a claw grip which I like. I ordered it from Overclockers last night, so after a lot more research I'm hoping it suits me.

I've just bought one it's brilliant, and I got it cheap. The G502 Lightspeed mouse to go with it is also great.
I have no idea why people think recharging these devices is some kind of issue or hardship, it just isn't.
To contradict most of the advice in this thread: wired through and through. No batteries, no maintenance. Somewhere good to tether the mouse cable and you can have many happy years.

I don’t want to suggest a mouse without knowing if you have Small, Medium or Large hands and without knowing your prefer Grip
for me wireless everything, mouse, keyboard, wireless headphones, wireless charger, wireless mat charging the mouse. I am anti wire and willing to make the necessary sacrifices to have no wires. 10 years ago wireless stuff had more miss than hit, but now if you buy from a reputable brand most wireless keyboard and mouse are just as good as wired. Only thing I would recommend is to turn off all RGB to to prevent yourself form having to charge them regularly. If you like RGB on and don't like charging stuff regularly then get wired.
wired does have its advantages, like no charging or battery degradation in few year so they last much longer.

I had so many devices that need AA and AAA batteries that I bought a separate charger and rechargeable batteries, payed for itself 100x over. have 3 Xbox controllers, remote controls, keyboard and mouse, alarm clock, blood pressure machine, torches ect buying batteries for all of that would quickly add up. If you have many devices I would seriously invest in some.

I’d actually come up with a mouse which uses the PixArt 3395 sensor (the sensor used in most current flagship mice), with internal battery and USB-C for £39.99… but the size and shape is aimed more at small to medium hands who use claw grip.
Larger mice are less common, and ones with a top tier sensor and a built-in rechargeable battery with USB-C are all quite expensive, so struggling to find something perfect with it having to be inexpensive.
One option that does tick a lot of boxes is the Glorious Model D Wireless. it’s wireless, USB-C rechargeable, its shape is similar to Deathadder V3/V4 and the Zowie EC series so well suited for Med to Large hands using Palm Grip.
It uses a lesser sensor than current flagship mice, but unlikely to tell a difference tracking wise as they are all pretty much perfect in this day and age.
It can be had for £34.99.
