Working and gaming with multiple GPUs but not SLI or XF

When you are gaming in Windows and have multiple GPUs, how do you tell the game which GPU to use? Similarly, if you are working and have multiple GPUs, how do you specify which GPUs you want your software to use? And how do you combine the two so you have a background task working on one GPU so that you can game in the foreground on another GPU?
 
A lot of games will just assume and use GPU0 - some games and software have an option in the video menu/option to select a GPU to use but not all. There are some options in the nVidia control panel to select which is used for things like PhysX. I believe there is software you can use to force applications to use a specific GPU but I've not explored that. The other option is to use different monitors for different GPUs as this will usually result in the application using the relevant GPU but not always - some will still render on the primary GPU and copy it over which causes a slight performance decrease.
