worth upgrading to faster ram ?

From my experience (and my humble opinion ;)) you'd only want faster "rated" RAM if you intend to overclock past your current RAM's actual limit. The MHz speed value is the recommended bus speed that the memory is rated for.

I currently push my DDR2 RAM past its 800MHz rating for my current overclocked CPU.

The CAS timings, etc play some part in performance between RAM sticks of the same rating but its small. DDR3 is so cheap these days that you're in a position to spend your money without much guilt .... personally I wouldn't bother unless you need to attain higher overclocks.
 
As above - you wouldn't notice any discernible speed difference in day to day usage.

Have you considered trying to clock the g.skill frequency to 1600?
