GTX 580 is very well for 1080 res, but you've got 1200 ;-) 580 still should have meet requirements, otherwise go down with some settings (but no res & AA).
Alternatively (looking for low cost) you may look at two GTX es 560 (not Ti, like Gigabyte OC), but cards with no OTES are not really good for SLIing in my opinion.

Yes im running 1920x1080 but there are new branded 3gb 580 gtx's, instead of the previous 1.5gb models. The 3gb memory should help with the higher res. I am looking at getting a higher res monitor for my next purchase and thats the only reason I opted for the 3gb over the 1.5gb and when games demand more I will just sli with 3gb mem to play with instead of sli'ing 580's with only 1.5gb:(. Ive never used ATI so I wouldnt like to say much about the 6990.

Also my brother was running x2 260 gtx in sli on BFBC2 and it would freeze,BSOD and black out etc etc turned out there was a bug and didnt like sli set ups. BF3 probably will be ok with sli set up as Im sure they cant make the same mistake twice..... but who knows. So I would get a decent single card set up until all the bugs are ironed out.

I have been very impressed with my 6990, it is a tad noisy at full load but it's going under water soon anyway. I don't think you'd be dissapointed with either.

Thank you for taking the time to post that, exactly the sort of info I was looking for :)
I think I've narrowed it down to either a 580 3Gb or a 6990. Just weighing up whether it is worth the extra £100 for the 6990 for a little extra future-proofing.

I disagree that a single 580 is enough for BF3 on ultra settings, mine is clocked at 972MHz and I have had to lower a number of settings already to achieve 60+ FPS.

When ultra settings are available there will be no way to play it (on ultra) at an acceptable frame rate with a single GPU. If I were you I would either get two 6970s or a 6990 depending on the cheapest price.

If you can afford it then get a couple of GTX 580s, however in your position I would buy something that will last until the new AMD and Nvidia cards are out, whilst not breaking the bank, and then buy one or two of them.

I would agree with this. There's no way a single 580 is getting 60+fps.. I would say realistic average during gameplay is around 40(if that). On all Ultra.

Go quad sli and be done with it. Not going to get a straight answer with all the peoples opinions. But i know what I will be doing, I will be sticking with my single 580 then sli down the line. simple. Pointless spending big bucks. end of

Thanks everyone for all the help and advice. Think I am going to go with a 6990 after doing some more research :)

I have the gtx 580 3gb I play at 1080 res and I can max out all setting with max AA with an fps of 70-100...

I'm thinking that a single 580 isn't enough too, however people are reporting such varied results. Whether some are over-optimistic or maybe bending the truth a little I don't know.

I find it mind blowing that the most expensive single GPU can't max BF3 :(

I really want to build a pc but one that maxes BF3 no problem without having to do SLI ..........I really don't want to wait until Feb either when next gen comes out..... stuck what to do.... just like you.........

Someone work out the economics / fps effectiveness of say running 2 x 570 in sli vs 1x 580

Get two 2GB 6950s, that's what I'm tempted to do although I don't play at any higher resolutions than 1680X1050. You need more than 1GB VRAM at your resolution but 3GB is overkill. Two 6950's is where its at!

Can I ask OP.. what is your system spec and what drivers are you using with your xfire 4890's? I cant seem to get above 40fps on even the lowest settings at 1366x768 with 4870x2 :/

Do you have Catalyst AI turned on and to advanced in CCC? That made a big difference for me. My spec is an i7 at 4.4Ghz, Asus P6T deluxe and an OCZ vertex 2e.

So would it be better to get two cards in SLI rather than just one? Are there any downsides to dooing this?

OP you should be very happy with the 6990 as long as you don't mind a bit of noise. I've been running the beta with spec in sig and it runs great at 1920x1200. I don't like the fans ramping up too much so I run my cards at 750MHz (very quiet at this clock speed). Obviously lose a bit of performance but it's still more than enough (Ultra settings).
