Your ultimate salad (not side salad)

I made a pretty epic salad on Tuesday.

Steak, cooked on grillpan and then sliced
Sliced courgette, also in the grillpan
Spring onions
Baby spinach
Sliced pepper
Boiled and halved new potatoes
Creme fraiche and lemon juice dressing
Grilled cherry tomatoes on the vine.

SO yummy!

Nicoise

New potato
Tuna
Boiled egg
pitted olives
tomato
cucumber
lettuce
french beans (or asparagus)
sweet pepper
radish
red onion or spring onion.
French dressing

serve with warm bread.

Savoyarde is a blinder.

Lettuce,
Red onion,
Corn,
Tomato,
Cucumber,
Comte cheese,
Lardons,
Par boiled baby news, fried off in lardon pan,
Poached egg on top.

Bliss

Recently been making ceasar dressing for the past month or so and we have it at least once a week now.

6 cloves garlic crushed
2 anchovies (I pestle and mortar these with the garlic) - Optional but I like them
1 tbsp dijon
1 tbsp vinegar
2 tbsp mayonnaise
salt
pepper
lemon juice (half a lemon)
olive oil (1 or 2 times the volume mixed above)

Dressing is mega garlicy but just wow amazing.

Garlic croutons with paprika, salt and pepper fried in olive oil.

Then it's just romaine and whatever else you like with boiled eggs, chicken and parmesan. I tried bacon crispy and broken up but it just gave it too much saltiness.

Big fan of Nicoise, too.

I tend to do this one as a starter these days but it's just as good as a main (in fact it's a blatant knock off of an old Pizza Express salad).

Mixed leaves
Sliced sweet peppers
Sliced pears (fresh, not tinned)
Gorgonzola (decent runny stuff, if it's about to run off itself then perfect)
Pan fried pancetta slices on top
Ranch style dressing

Small portions make a great starter or a big bowl with a load of decent herby bread is a great main.

Another simple and good one is:

Take chicken breast and coat in mix of sweet chilli dipping sauce, hot sauce (optional) and lime juice and oven for 20mins.
Also take streaky bacon and cut up, on a baking tray with oven chips and more of the sauce mix drizzled over.

Cut avocados up in to strips,
place on bed of rocket and baby spinach
thin slices of red onion too
add tomato and cucumber
then add the chicken sliced up,
cut the chips up in to "crouton style pieces"
break up the bacon and chuck over too

make dressing with leftover sauce and olive oil.

TASTY!

So here is what i use.

Salad potatoes (or fries)
Cheese
Peanuts
Peach
A somewhat unique choice for a salad, don't you think?

I assume these and the other ingredients go in the same bowl?

Dressing is mega garlicy but just wow amazing.
Christ! I'm not surprised with 6 bloody cloves in there!

Doesn't it just taste of garlic despite all the other ingredients in there?

My favourite:

Panzanella bread salad:

Stale bread cubes
Cucumber

Vine tomatoes
Extra virgin olive oil
Red wine vinegar
Sugar
Fresh Basil
Capers
Black olives
Garlic clove ( to rub bowl with )

Another feta one, which is really good for BBQs is:

Feta, beetroot, lemon juice, parsley (fresh and chopped), olive oil and balsamic vinegar.

Simple and lovely.
