You pull back on the joystick to maintain 1g as you rotate the Aircraft. At the top, upside down, you are pulling the nose toward the ground to create the feeling of 1g. Because the aircraft is rotating, the direction you're pulling the nose to changes constantly.

The planes extreme velocity is creating a gravity stronger then the earths, in the vid they are turning a lot
Same reason its best to be short like Tom cruise when flying mach 2 they can be knocked out as the heart can no longer pump enough blood to the brain so they wear a suit that limits blood to the legs and also got to be very fit. Same applies to F1 drivers apparently, neck muscles of Hercules required
At 6G, my standard-issue 25lb human head weighs 150lb.
