It might well be rendered using the game engine, but the transitions between the characters' movements are far too smooth for it to be 'gameplay' footage.
The footage itself is rendered in real-time, however the editing of the video most certainly isn't. A game with a camera zooming in all over the place like that would not work.
First UFC game i had on my dreamcast was great fun.
Had a mate who was just really good on it though, i remember a fight when i swung one punch and he intercepted it and made me tap out. Fight lasted around 6 seconds lol
Like Moody says it looks pre-rendered using the game engine and glossed up. It certainly isnt real-time gameplay, but theres no reason why the finished game shouldnt look fairly close to that.
