Hi, just wondering if anyone has made any chicken wings or drumsticks with a sauce(BBQ, hot, sweet etc) like you can get in the Americna style restaraunts and if so how do you cook them?

Cheers, Mark

if you're short on time, get your sauce, rub it well into the chicken, stick under the grill.

If you're preparing in advance (about 24hrs or so) stick your chicken into a sandwich bag (or other sealable food bag) with the sauce, stick in the fridge until such time as you're cooking - this gives it a nicer flavour, as the spices etc leech into the meat.:D

that doesn't give the same result as the american style though

Are you referring to southern fried chicken?

Thats basically chicken with skin, dipped in egg, coated with flour with herbs and spices, and deep fried.

No, like hot and spicey wings or buffalo wings etc. Just wasnt sure how they were cooked.

They maybe honeyed wings, here is my recipe:

2 tbs Oil (not olive)
About 750-800g of chicken wings
3 garlic cloves crushed
1 inch piece of Ginger peeled and crushed
50ml dark soy sauce
2 tbs light soy sauce
2 tbs dry white wine or sherry
2 tbs Honey.

1. Heat a large fry pan or even better a wok till very hot with the oil in it.
2. Add the Chicken wings and stir fry for 5 minutes or till browned.
3. Remove the chicken wings and drain off all the oil reserving about a tablespoon of it back into the Wok. Leave the chicken on kitchen paper.
4. Re-heat the oil and add the Garlic and Ginger and stir fry for about 30 secs.
5. Add the wine, soy sauces and honey and bring to a simmer.
6. Add the chicken to the simmering sauces and place on a lowish heat with a lid on for about 30 mins.
