Reheating Chinese

I generally find anything over 3 days old (refridgerated) is unsuitable for reheating. Tuesday night is fine :) be a man and down it!
 
Most chinese stir fry rice is best cooked by using overnight cooked rice. Heck, the stir fry rice you bought from the chinese takeaway was probably left overnight in their fridge
 
Ive been reheating rice since microwaves first came out and it hasnt done me or anyone else in my family any harm.

Just out of interest does anyone know anyone that has actually fell ill due to reheating rice? i doubt it..
 
Undercooked unpolished rice can give you food poisoning. If it has been cooked once, it will be fine to eat again cold.

If you're reheating, bring it back to boiling temperature, and again it will be fine. You could eat a mouldy steak without falling ill if you heat all of it to at least 70 degrees for at least two minutes.

I've heard that reheating rice can cause food poisoning. Is this true?

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem – it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once.
 
Never had a problem with re-heating Chinese at all, and considering I have a damn good Chinese take-away no more than 25 yards away I eat a lot of Chinese. Neither do I know anyone else who's ever fell ill from re-heating it.

No, No just NOOOOOOOO....

It's not just the bacteria, it's the toxins bacteria release. these toxins are not broken down by heat. thus you can still get ill by eating mouldy meat. Regardless of the cooking temperature. Rice spores also have a protective shell and again will not be killed by boiling water.
