Anyone eat Rabbit? ( and other stuff...)

I could live off game alone. Partridge, Venison, Pheasant, Bear, Boar and so on - all absolutely delicious.

On a side note I recently tried Ostritch as there is an Ostritch farm just down the road from me and Ive got it say its delicious and its supposed to have 95% less fat than beef.

Where are you? I'm in Bucks too and we love ostrich.

I also love rabbit, having eaten it three times while in France, only to find out that I'm very allergic to it. It can be a dry meat as there is not too much fat on it. therefore it needs slower cooking, preferably in a sauce. I would think that Hugh F-W would have some good recipes as it's the kind of thing that he would go for.

As for the knives, always try them before you buy them and don't necessarily aim to get the same make / brand for each knife. I have found that Wusthoff do amazing ones, but they are pricey so we've built up our collection slowly. Have a look at their web site as it is very informative, even a sharpening masterclass video. They make a lovely santuko knife which is my favourite at the moment.
 
I usually fry rabbit up and use it for fajitas or sometimes put it in a pie with a bit veg. Like most people have said it's similar to chicken and can be used in similar ways. If you're oven cooking it you need some water round the side and a lid on top or it will go dry and tough.
Wood pigeon, again tried in fajitas and also cottage pie style with mash potatoes over the top.
Pheasant I would normally roast with a stuffing inside and bacon over the top. pheasant and home-made stuffing sarnies are awesome.
Goose I've done similar to pheasant but using sausage meat as the basis for the stuffing.

Can't help on the knife front, the one I use is not anything modern or branded. It's been passed down the family so a few years old but as long as it's kept sharp it does the job
 
On the subject of knives, i have a couple of tojiro senkou knives (Recommended by Heston Blumenthal!) I was at Sat Bains the other week and I noticed he had a few of em too. Only problem is i need to get some decent whetstones now to sharpen them.
 
The smell of cooking rabbit is so vile. I would never eat a lagomorph unless there was some sort of war on and there was no food. This is defo WWII food along with Spam, any kind of offal and allotment grown veggies. I would go for the last one though.
