Good chopping knife

You get what you pay for with knives, spend around £40 and you'll have a knife that'll last you much longer than a cheap £5 one.

I ended up getting a global G-4, as long as it's kept sharp it goes through anything with ease, it'll cut an onion or potato like it isn't there, carrots or turnips are a little tougher but still easy. It glides through raw meat too.

A knife should be the #1 thing you invest in for the kitchen. Also get a good quality thick wood chopping board, the cheap thin ones tend to warp over time due to going from dry to wet and vice versa when you clean and dry them. Wood is the best surface to use the knife on I find.
 
What an awesome thread. This is a perfect gift for my GF, she (and I) love cooking but we use cheap Ikea knives. I'm going to get her (among other things I hasten to add) some really nice knives.

EDIT: WOW!!! Sets of 5-7 are expensive!?!?!

save some money up and buy a decent set of knives you wont regret it. For a cheaper option have a look for some Victorinox knives, very good knives and a reasonable price, or if you fancy spending a lot look for some global knives and invest in a good steel to keep everything sharp
 
As the poster above just said, the Victorinox ones are pretty cheap and cheerful, and decent cutters too - but you'll need to double your budget to £20 I'm afraid.
 
Should be able to find some reasonably priced Sabatier products around, good for the money. Edit, it seems there are many different companies using the brand name. Thought it was strange, because the real Sabatier stuff is extremely good quality with an appropriate price tag, yet many high street stores sell knifes with the same name. My fault, thought it was one and the same.

Also go to a cook shop and find one you like the feel of, I liek the feel of I.o shen but haven't purchased one yet...

Then get it online.
 
I use a j.a henckels cooks knife is very good and feels comfortable to use and so sharp it will have your fingers off in a blink of an eye :eek: no room for errors anyway which i found out in the first week with minor cuts on fingers lol.
Mum thinks im nuts for spending a lot on a knife but i know the difference compared to her ten bob knifes that crush tomatoes rather than cut em ......
 
What about those Santoku knives? You see a lot of chef's using them on telly these days and they are supposed to be a really good multi purpose knife.

That's a good price depending on condition, but i would never recommend buying second hand knives.

everyone uses a steel at a slightly different angle so after a while the edge will be aligned that way. Sharpening someone else's knife will probably result in taking the edge off, rather than sharpening.
