I'm guessing it was not a production setup and had some kind of dev machine hooked up with some proprietary way for changing the game...
 
The answer to the red suits is easy if they didn't have the suits on every time a new person jumped in it would want to log in for new person so they wouldn't have been able to just change person so quickly.
 
If i'm honest the video with the 4 guys in orange didn't make Natal look all that great. I guess it's still in its early stages so it'll be ironed out a bit more before release.

Doesn't help that the guy demonstrating it is such a numpty.
