Christmas leftovers

Now i know a lot of you will say what, we have none, its to soon, but some of us will already have ideas from a previous experience.

What i think will be good is a collection of recipies beforehand.

So what masterpiece have you made from your xmas leftovers.:)
 
Make a turkey curry, mmmmm.

You'll need:

A red/green chill
Ginger
Garlic
A tin of tomatoes
Ground coriander
Turmeric
cumin
garam masala
yoghurt/cocunut milk
One large onion

Finely slice the ginger, garlic, chilli and onion, gently fry for 5 minutes.
Add 1tsp of the powders in following order (1 min apart)
turmeric, cumin, corriander then garam masala then add the tomatoes. Cook for around 5 minutes, then transfer to a blender and blend until smoooooth.

Now, fry thickly sliced onion and any other vegetables you want (pepper or okra is good), add the left over turkey and add the curry paste. Top up with some natural yoghurt/coconut milk and leave on low heat.

Serve with rice or naan.
 
Sandwiches.

I usually pick the carcass clean before there's time to make a proper meal out of the leftovers. Bubble and squeak sounds like a great idea, or maybe hash.

IE hot, cold, boxing day, morning after the hangover, and is it the main meal of your day.
