Basil with any tomato based dishes. Majoram with roast meats. Rosemary, which is exceptional for roast tats, just par boil potaotes then roast with garlic and loads of rosemary. Bloody gorgeous. Saffron in Paella. Tarragon with chicken. There are so many herbs that go with so much stuff. I'm looking forward to having a garden again later this year so I can grow my own again.
I don't really have a favourite herb, it depends on what I'm eating. Rosemary and lamb, fresh basil and tomatoes/pasta, coriander in curries, sage and peas in spaghetti carbonara is particularly good.
