Do you use CCleaner every days, at all? That, or something else, could be clearing out your cookies.
No, don't tun anything like that. Could be something else that I'm not aware of though.
I kept getting this with Windows 7 x32 and x64. I tried allsorts but couldn't get it working :/ so I moved to Firefox.
Ok, I'll bear that in mind as a last resort (no offence to any Firefox users)!
This worked for me:-
tools > internet options > privacy > advanced > tick override & accept & accept.
(maybe also session cookies, cant remember)

The strange thing is that my work PC has exactly the same setup, except for the fact that it's running Win 7 32 bit instead of 64 bit (and I don't get this problem at work, I'm always logged in and I don't have override enabled).

Something I haven't mentioned yet...I get quite frequent crashes on my home IE8 when visiting certain websites, especially IMDB. It may be that these crashes are causing the cookies to be deleted, or maybe that my Avast! AV program is doing that. I think it must be a third party plugin such as flash or Adobe something-or-other causing this. Will post back if resolved, in the mean time any other suggestions are very welcome!

"This fix worked for me:
Open Internet Options, under General Tab click Delete in Browing History, make sure every check box is ON except top one (Preserve...) and click Delete.
That in theory should delete every History... but it does not do it completely (THAT IS THE BUG)
In General Tab click Settings in Browsing History, click View Files, manually delete the remaining Cookies. Do this again and this time also delete the contents of 'view objects' as well as 'view files'.
No problemo!"
