Yeah they do.

When they shed the back end will straighten out and they are tucked in there. They are more for show than anything though as far as i know :)

Males of some species can certainly fly (possibly some less tubby femles too). I used to keep mantids of a similar appearance to that (forget latin names etc as it was ~10 years ago), and always ended up with females. However, my friend had a male of the same species, and would let it fly in his garden. Luckily they're only able to fly downwards and along, not upward (although they can go a fair way)!

Extremely interesting creatures they are.

Are praying mantis hard to keep?

Nope, very easy.
