Generally speaking, if you do not overclock they are both very similar with one winning half of the benchmarks and the other winning half also.
If you intend to overclock get the 570 because it has MUCH more headroom than the 6970. A GTX570 can easily be overclocked past GTX580 performance but the 6970 cannot.
I own 580's, but from what I have read most 570's (stock speed 732MHz) will hit 830-850MHz (GTX580 akin performance) on stock volts and 900-930MHz with additional volts. That is a 16%-27% overclock. The typical overclock for a 6970 is 950MHz (up from a default 880), with some people hitting as high as 980. That give 8%-11%.570 can overclock past 580 on stock voltages or have there been results of 6970's with higher than stock voltages yet?
Going by the heaven bench the 6970 has better tessellation performance than the 570.
