What will the performance gain be between having 2x HDD's versus 1x

Performance will be increased using two drives in RAID 0 but you double the chance of losing your data. If one drive dies you lose everything.

What about 2 drives in Raid 5(mirrored drives). Is there a speed increase with raid5 and you get safety?

Raid 5 needs at least 3 drives and unless you're using a proper hardware raid card you'll more than likely lose performance.
