hmmmm maybe the company selling the lovey stuff figured it best putting the day down to a saint to cover their exploiting ass's and also figured that certain saints may be veiwed upon differently by various ppl around the world.
Therefore finding several saints attending a feast on a certain day in history would give the world enough saints for ppl to atleast find 1 in the group they liked enough to actually help celebrate the day.
Hence maybe the reason that so many historians are still disputing the truth to which valentine it is we celebrate each year.
