here's my dilemma, first understand i know little to nothing about OCing, but like the performance gains. SO i bought an overclocked bundle (i7 @ max with 6gb etc.)

And now i have a need to run some VM's on the machine so would ideally like a heap load of memory in there (briefly saw a 24gb kit that looked delicious) but i dont want to lose the overclocking the lovely people at OCUK did for me.

So that's where im stuck - would like to change the memory but dont want to hurt all the settings that were pre-configured
 
Changing the memory shouldn't affect the OC at all, but in case it does, there will be configuration saved in the BIOS that will always be there unless you delete it, or you update the BIOS.

Not entirely true, with all 6 RAM slots filled the memory controller will be working harder which makes it harder to maintain a stable 4GHz overclock. Chances are you'll still be able to get maybe 3.6GHz out of it with 24GB RAM (but that's just a guess).

My suggestion is if you need more RAM then go for it, people on the forums can always help you reduce your overclock back to a stable setting if needed.

edit: Also if you think you'll really need 24GB I'd suggest buying 2 of these kits http://www.overclockers.co.uk/showproduct.php?prodid=MY-110-KS&groupid=701&catid=8&subcat=1389 as it's cheaper than the 24GB kit.

Can't speak from experience but what you usually hear is "it's not the amount of memory that makes a difference but the number of modules" so in theory you should be able to keep the same overclock with a 12GB (3x4GB) kit as your current 6GB kit.
