I've tried to find a youtube of the original version of 'New Moon' by a guitarist called Jimmy Herring, if you are into Jeff Beck and players like Alan Holdsworth, Eric Johnson etc who seem to have an unmistakable signature sound on the instrument then check him out, his phrasing is incredible on that track. This is on top of all the usual candidates from The Eagles, Hendrix, Led Zep etc.

and one of the classics that I think deserves a special mention, this is how a les paul should sound imo:

Dire Straits - Brothers in Arms (02.57 and 4.14)

I'm a big fan too. I would love a Gretsch the Setzer model probably the only signature guitar I would ever entertain.
