Farming low level herbs/ores can be very profitable as people want to power level various professions without taking up herbalism or mining.
Very true with leather as well ... pretty much all my toons on Terenas start off with skinning as a profession - you kill so many beasts in the early levels, it's basically free gold. Certainly enough to finance skill purchases and the odd gear splurge on the AH anyway ...
I can't be arsed to study the AH for hours on end - I just sell skins and any BoE drops from questing (that my class can't use) on the AH on a Friday night and by the time Sunday evening comes round, there's several hundred gold sitting in the mailbox. Last weekend was great in that regard - I made about 800-900 gold in less than 24 hours. Not a king's ransom to some players, but way more than I need while I'm levelling
