Emulators isn't like the real thing though you don't get the same feel I don't think.

How do these things work, are they random, they must go back decades how do they electronics in them work out what is what?

Used to have a table top machine years ago, was awesome.
Other than that only had a Popeye fruit machine which was great for saving money

Fruit machines aren't random, not even back in the 70s - otherwise they might lose money. But to answer your original question:

I would love a coin op arcade machine, I'd love a scrolling shooter type like metal slug or something like that.

If I couldn't get a genuine one I'd make my own using MAME, oh wait I wouldn't because I'd fail at it.

MAME arcades isn't hard to setup. It just takes time.

I'm going to eventually have a Man Room.

With a hidden bookshelf secret entrance, pinball machine, snooker table, my own bar, a huge projector, and sofas/bean bags.

If I don't have this at some point in my life I'm going to be really disappointed

Would love a pinball machine. I remember there used to be loads about, now its exciting when you find one in an arcade.
Sucks places don't seem to take care of them and they fall into disrepair, there's one or two a drive from me, in bad condition, never turned on. When I played one a few years back it was broken, I suppose that's why they turned them off without bothering to get them fixed..
Shame it seems pinball machines are dying out..

One day, when I have room and money I hope to get one, keep it going!

Same as mame you can build your own pinball machine but takes a lot of money and time. HyperSpin is the Arcade version and HyperPin is the pinball version.
