So what actually improves in your muscles to make you better at endurance?
I get hills and sprints as obviously they just get bigger and stronger and your cardio improves, but what about 80 miles at a low-medium pace?

Went out at 6.30 this morning to beat the days heat, did 54 miles in 3 hours.

Oh right. The fast twich fibres in your muscles break down and convert to slow twitch fibres when you do endurance based training. Put in rather simplistic terms fast twitch fibres are for power and quick effort eg sprinting, slow twitch can't extert as much force but can do it for much longer, ergo endurance.
So essentially the longer you spend training your muscles in endurance, the more slow twitch fibres you'll build/convert and therefore your muscles will be naturally able to exert force for longer.
