Op could you do without coffee or have a back up if this fails. If either are yes after all this just go in when she's on a late shift. If you asked where she was they will probably have mentioned it to her, this is probably helpful for when you go in so you can gauge it better.
Like if shes extra flirty when you go in win, if she bails behind the counter......

if you don't already chat/flirt with her then you probably should yes... its not like you have long to chat when buying your sandwiches and it would be a bit random for you to simply ask her out if you've not spoken to her before - I mean if you're going to ask out a completely random girl you've just approached then you'd chat to them for a bit first, look for indications they might be interested in you - something you perhaps don't have time for in the queue, in pret at lunchtime so you will probably have to crack a joke with her, flirt over a few lunchtimes... assuming she reacts well to the joking/flirting and recognises you/smiles when you come into the shop etc.. then you'll just have to go for it one lunchtime
