I think if you have full stamina points then it won't go down, not sure if that last one would be possible without perma-stamina
Most likely 0, unless R* have already noticed the servers will be cluster-****ed and have already prepared for every copy of GTA V to be online that day
Although that probably won't prevent it anyway!

Do you have to complete a series of stranger & freak missions for it to count towards 100%? Because I've done 19 in total, but my 100% checklist only says I've done 3
I've also done 22 hobbies and pastimes but my checklist only says 15.

Yep, only certain things actually count towards the 100%

If you go on the Social Club website and check out your career stats and click on Checklist you can see which strangers, hobbies and misc activities contribute to your 100% (the items with the coloured stripe on them indicate this).

Press 'start' and go the stats menu. It's in there somewhere, I saw it the other day.
On your social club, there is a checklist too.

Is there any way to find out your best time on the triathlon events after you've completed them? I can't see to find the scoreboard either and I really cannot be bothered running the race again just to see the scoreboard at the very end!

you can go onto social club to find out all of the things you've done, it's listed in their.

I couldn't find my times in the social club, if I go to pastimes and events it merely says I've completed them, doesn't give me my best time or the leaderboard.
