SkyRE off the top of my head, although I don't think skyrim needed the scale of overhaul to the same extent oblivion did - so there is nothing really comparable to OOO for skyrim.
If you spend a bit of time installing Minecraft Forge, then you can just drop forge compatible mods into the forge directory. My little 9 year old like Animal Bikes mod, loads of different walking/flying mounts

forge is like a master mod that makes modding easier. there's plenty of guides out there and its much better than trying to manually install mods [something i've never successfully done]
if you want ultimate ease you can download tekkit or feed the beast [ftb] they're mini applications that allow you to choose from a range of modpacks that are pre-made.
