what you use to get a nice clean/level grout line? ive tried various things, plastic tubing run across it and it still looks uneven

That non-waterproof plasterboard will come back to haunt you - tiles are indeed waterproof, grout is pretty waterproof, but the water tends to leech in between the tile/grout interface and soak the plasterboard.
I've specced hundreds of "accessible" bathrooms to be put in to government buildings over the years, and always specify green plasterboard. There have been a good few where the builders have just thought "**** it, it'll do fine" and used normal plasterboard - 2 or 3 years later, the wall is nice and soft, creating cracks in the grout and letting even more water in!
You might want to try regular use of a wipe-on grout sealant like the Topps Fila ones, or a spray-on like Sealguard to prolong it's life - but trust me, I've seen a lot of these having to be ripped out and re-done.
It'll all depend on how and where the water is going on the tiles of course, but ordinary plasterboard and bathrooms are not a good mix.
Does look fantastic though, cracking work!

I just used the edge of the grout float.

@ trans am. Thanks for your comments, we'll see :-). Ps I did use a grout sealer.

I've only used regular pb's too but I've used this tanking kit in the shower to hopefully prevent any issues... Anybody have any experiences of this stuff?

ive read about it and seen it used on youtube,i think im gonna go with the green moisture resistant pb,i only need to stud out one wall to hide the pipes behind
