That non-waterproof plasterboard will come back to haunt you - tiles are indeed waterproof, grout is pretty waterproof, but the water tends to leech in between the tile/grout interface and soak the plasterboard.
I've specced hundreds of "accessible" bathrooms to be put in to government buildings over the years, and always specify green plasterboard. There have been a good few where the builders have just thought "**** it, it'll do fine" and used normal plasterboard - 2 or 3 years later, the wall is nice and soft, creating cracks in the grout and letting even more water in!
You might want to try regular use of a wipe-on grout sealant like the Topps Fila ones, or a spray-on like Sealguard to prolong it's life - but trust me, I've seen a lot of these having to be ripped out and re-done.
It'll all depend on how and where the water is going on the tiles of course, but ordinary plasterboard and bathrooms are not a good mix.
Does look fantastic though, cracking work!
