Ideas for sweet potato

Your roasted tomatoes with balsamic sounded so good.
Going to have them tonight with lime and ginger chicken and sweet potato crisps mentioned in here.
My ultimate sweet potato recipe.

1. Madeline in thin slices.
2. Place on a baking tray, generously salt and pepper.
3. Place a backing tray on top, sandwiching together.
4. High heat 20 minutes

5. Remove, while cooling a little make the following dip;
(Natural fat free Greek yogurt, loads of pepper, few squirts of 1cal garlic spray) Mix vigorously

6. Serve immediately as crisps and dip

I'm pretty obsessed with them at the moment. They don't really need the balsamic if they're decent quality tomatoes. They're already quite tangy. Main thing is to drizzle with olive oil before cooking and sprinkle (don't crush) on some good quality sea salt flakes.
 
Someone did post mashed sweet potato with peanut butter, or was that the other thread and probably you? Can't see to many people doing it.

T'was me. It's not common but it is nice I assure you. If you like both separately I'd be surprised if you didn't like them together :) The 100% natural stuff (where the oil separates).
