I would imagine they would never actually take off at that angle. More of a demonstration to show what the aircraft can actually do, if required.

Think of say London City airport where the take off angle is considerably steeper than the typical angle requirement.
Standard nose-up pitch is 15 degrees on most airliners at rotation.

Both the A380 and 787 have cruising speeds of mach 0.85, and at max operating speed the 787 is faster (mach 0.9 vs 0.89).
do they cruise at the same altitude?
