I would imagine they would never actually take off at that angle. More of a demonstration to show what the aircraft can actually do, if required.

Back in 1988 a 737 had to do an emergency landing on a levee near New Orleans after both engines failed. Once all the passengers/cargo were off they changed the engines, loaded it up with minimal fuel then launched it almost vertically (because the was hardly any levee left) to get it to the nearest airport ASAP (because it was starting to sink).

Think of say London City airport where the take off angle is considerably steeper than the typical angle requirement.

Standard nose-up pitch is 15 degrees on most airliners at rotation.

Both the A380 and 787 have cruising speeds of mach 0.85, and at max operating speed the 787 is faster (mach 0.9 vs 0.89).

Mach speed changes based of temperature/altitude(pressure), do they cruise at the same altitude? It'll vary depending on some other factors too.

Mach 1 at sea level and Mach 1 at 35,000ft is different, the latter being relatively slower.
