My recommendations:
First try Czech traditional cuisine, which is basically meat and stodge
Go to a local restaurant not so much aimed at tourists, these places are really cheap. Order Svickova! This is a Czech dish, it's steak, veg, potatoes, all covered in a pepper sauce and topped with double cream and jam! Bizarre - which makes it undoubtedly Czech.
Drink Czech beer, Kozel and Urquell. Our guide said him and his friends avoid bars that sell international main stream beers as they felt they correlated to being not very good bars.
After you've eaten and drank Czech cuisine and managed to digest it, you might want to try something a little more sophisticated:

Great Italian restaurant. 15th out of 4599 restaurants in the Prague according to trip advisor. We absolutely loved it.
And then the field is a michelin star restaurant if you really want to treat yourself.

There are loads of bars and restaurants to try out but one in particular is "the pub", just for the novelty of sitting round a big table and pouring your own beers from your own personal beer tap
I was so drunk in there, I spilled my full stein all over my lap and the whole bar erupted chanting and laughing and singing songs that I couldn't understand as it was in Czech or maybe German (they were probably singing I was a dick head). Pretty rowdy, but very fun.

As for site seeing, it's all mentioned above, the bridge, the palace. We took a sedgway tour which was really cheap for what you got and also meant you could see the city limits and get right across the place effortlessly. However, I believe the locals were petitioning to get them banned so they might not be around anymore. Silly really.
Edit: if you want to go to a shooting range don't go anywhere else but here

It's well out of the city, but their packages include transport there and back. Do not use just any old shooting gallery place that all the stags go to in town. Those places are not guaranteed military grade ammunition and they don't seem as keen on key things like safety! The one I linked is the real deal. When we turned up, a squad of armed police officers were lined up on one of the ranges practicing. Many locals were also using one of the ranges for their weapons. It was clearly the right place when we turned up. So if you've never fired a gun and not considered this activity, I highly recommend it. Lots of fun.
