How much setting up does it require? Found nothing really showing or explaining. It's got dual sim and we have a vodafone and EE we'd like to use.
Not a lot. Just need to make sure you set the APN's up and you should be away. MikroTik kit is a bit of a learning curve if you haven't used it before. The webfig quickset menu will just about scrape you to a working config but there is SO much more.

Yes, you can specify which SIM you want to use as the primary. The other one can be set up as the failover.

EE is

Name: EE internet
APN: everywhere
Proxy: Not Required
Port: Not Required
Username: eesecure or not required
Password: secure or not required

Vodafone is

Name: Vodafone internet
APN: internet
Proxy: Leave in Blank
Port: Leave in Blank
Username: web or not required
Password: web or not required

I can confirm the Vodafone is working which is in the slot B

I suspect you typed it in. Try the vanilla EE settings I posted. It’s always worked for me.
 
Is there something I’m missing for the sim car selection to which APN that is?

I’m not in front of a machine running webfig at the moment but from memory you need to set the sim slot in the modem tab on the LTE interface. There are generally two options - up and down. Which I know doesn’t make sense, but welcome to the world of ‘Latvian Logic’.

With Mikrotik, you always need to bear in mind that this is generally not a device for Plug’n’Play home users. Quickset will get you up and running but after that you need to switch to Webfig and it can be overwhelming understanding where everything is and how the software authors think.
 
And which interface are you using currently? You shouldn’t still have a default LTE interface if you started off with Quickset.

How did you get to this point?

You may be better off doing a complete reset and rebuilding the list. Quickset gets you up and running. After that you’re best downloading Winbox which gives you ALL the exposed options.

Webfig right now. I honestly can’t recall it’s been one of them weeks. So many projects on the go.
