It depends on the software you use. I use software development and CAD programs and these make heavy use of storage for read/write and both small and large files (for example one CAD program can write a 250MB undo file per edit, frequently reads from 15GB+ of SqlLite symbol libraries etc).
The switch from good SATA SSDs (850 Pros) to NVMe SSDs (970 Pros) was a night and day difference, although with other software I saw much less difference.
