PSU advice

A decent 550w unit would be fine... Seasonic and Superflower would be on my list some of their units come with nice lengthy warranty

No overclocking I don't think its needed really. Maybe ram?? But I am planning on sticking with a Ryzen 5 3600 and GTX 1660 Super for the next 3 years at least. It's going to give me the performance needed to be able to play latest games for a while yet?

RDRII is probably the most demanding on hardware right now, you should be able to play that at 1080p 40ish FPS? So less demanding games 1080p no problem.
 
Checked the benchmarks for this pairing of cpu and gpu and the fps was always 60+ on ultra. But I would just be happy with high settings and gain a steady 75fps

These have any issues with ram clearance?
 
No they should be 100% fine with any Ram.

Looked at some video reviews and it was pretty cool. I think I shall be using this as I was planning on putting an exhaust on the top of my case along side the back exhaust. The case will have two big fans on the front for intake as its mesh front for full air flow. And it can have a fan on the very bottom also. What arrangement would you suggest?

For that system a single exhaust fan at the rear and 2 front intake fans would be fine. If you want 4 fans (i.e 2 front and 2 rear) then just run the exhaust at a lower rpm for positive air pressure, or if they are 120mm rear vs 140mm front then that should be fine for pos air pressure. I wouldn't bother with a bottom fan.
