Presumably it would have to be absolute top of the line NATO jets like the F-22 and F-35 flown by NATO pilots so they could even operate "safely" in Ukraine, then if a Russian jet entered Ukraine we'd shoot it down. What do you think would happen then? I'll tell you, Russia would fire cruise missiles at the airbases that those planes are operating out of, this would then trigger article 5 of the NATO treaty meaning the alliance would consider itself under attack by Russia, NATO would then declare war on Russia.
I'm not being funny, but did you not consider the chain of events that might occur when you decide to shoot down a Russian jet? It could lead to a nuclear war which would be the worst thing that has ever happened on Earth since an asteroid wiped out the Dinosaurs.
One solution is to buy more wheat from Russia. The alternative is probably to watch Russia selling it to countries which then become tacit supporters.
Another is negotiating a settlement between Ukraine and Russia that allows mine clearance and use of black sea ports. That one needs time and diplomacy.
I suppose a no-fly zone and thetefore full scale Russia/NATO war is another option, but not one I'd choose.
As I said and you eluded to it here were going to have to play nuclear poker with Putin one way or another . I just can’t see NATO not getting involved.

That's going to need Turkey to allow warships through - which at the start of this they said they would not do and I've not seen anything since February to indicate a change in that stance.

I don't think that's true. Russia isn't sweeping through Ukraine with ease winning battle after battle and looking like they'll push on into NATO countries. I think Russia wants to capture the Luhansk and Donetsk regions, I don't think they have intentions to go further than that. They're not having a good time and they need this war to end.
