Ssd or hdd for Nas

Precisely why my important stuff is backed up on a second NAS, and in two cloud locations.

Everything else I can just re-download.
Like I said, RAID does not offer data protection, its there for higher availability. It doesn't replace off-line off-site backup especially if that data is your livelihood. RAID isn't going to protect against ransomware attack or accidental deletion or something happening to the physical device.

No need to tell me, I work in the industry.

Then RAID10 your NVMe SSDs too. That will still give you 16TB. Alternatively, set up a chron job (or something on the PC) to mirror the NVMe drives to HDD overnight.
No real need to RAID10 NVMe drives. You are exceeding your network limitations with one drive so unless the workload is on device then you aren't gaining much performance benefit with two drives. Might lower lower latency slightly and increase iOPS but I doubt you will actually notice a difference. If you have 4 drives, then use RAID 5.
