In the end I landed on an A35 AMG Premium. It's not a V8 but it ticks all the boxes. Couldn't justify getting a second car for the weekend with rising costs etc...

Think your missing the point of rise of costs can't warrant a second car. I sold my daily driver and bought the A35. I was never planning on getting a V8 as a daily
